Peanut Butter & Jelly Dream Cups: A Homemade Sweet Treat for the Kids

Today is National Peanut Butter and Jelly Day, and with my kids being huge peanut butter fans, I decided to whip up a batch of these healthy treats that the whole family adores! I love this sweet treat because it’s made with clean ingredients that I feel good about feeding to my kids.

Ingredients:

  • 2 Cups of natural Peanut Butter ( I prefer homemade)
  • 1 ½ tablespoons of honey or maple syrup ( Optional)
  • ¼ cup of melted coconut oil
  • Chocolate dipping sauce (optional)
  • A pinch of salt (only if using unsalted peanut butter)
  • ½ cup of jam or jelly (I prefer homemade)
  • Paper cupcake liners or silicone

Instructions:

  1. Line a muffin tin with 12 paper liners.
  2. In a blender, combine the peanut butter, honey (or maple syrup), melted coconut oil, and salt (if your peanut butter is unsalted). Blend until smooth and creamy.
  3. Divide the creamy peanut butter mixture evenly among the lined muffin tin cups.
  4. Spoon 1 to 2 teaspoons of jam on top of the peanut butter in each cup, spreading it out evenly.
  5. Use a toothpick to gently swirl the jam into the peanut butter for a marbled effect.
  6. For an added touch of indulgence, drizzle with a little bit of chocolate sauce.
  7. Place the muffin tin in the freezer for 20 minutes, or until the cups have hardened.
  8. Once set, store the peanut butter and jelly cups in an airtight container in the freezer. Before enjoying, let them sit at room temperature for about 5 minutes, if frozen.

To make your Homemade Peanut Butter:

  • 3 cups dry roasted & salted or unsalted peanuts
  • sea salt, to taste, (if using unsalted peanuts)

Instructions:

  • Add peanuts to a medium food processor. Blend until smooth, pausing every 30 seconds to scrape down the sides and give the motor a rest. At first, it’ll be chunky, then it’ll form a ball, and finally, it’ll turn creamy. This takes about 8 to 10 minutes.

To make your Homemade Mixed Berry Jelly

  • 3 cups mixed berries (strawberries, raspberries, blueberries)
  • Juice of 1 lemon (2 Tablespoon)
  • 2-3 tablespoons honey (adjust to taste)

Instructions:

  1. Rinse the berries thoroughly and remove any stems or leaves.
  2. Place the berries in a saucepan along with the lemon juice and honey.
  3. Cook over medium heat, stirring occasionally, until the berries soften and release their juices, about 5-7 minutes.
  4. Use a potato masher or fork to mash the berries to your desired consistency.
  5. Continue to cook the mixture for another 5-7 minutes, until it thickens slightly.
  6. Remove the saucepan from the heat and let the mixture cool for a few minutes.
  7. Allow the jelly to cool completely.
